Evisceration involves removing the viscera from poultry after plucking. This operation can be carried out by hand using manual evisceration accessories such as an evisceration fork or a lung rake, or with semi-automatic equipment for higher speeds.

In order to comply as closely as possible with hygiene requirements and regulations, Burdis supplies poultry hanging solutions with evisceration troughs that are entirely made to measure so that they can be adapted to your available space. 

You will also find manual and semi-automatic trimming solutions, which will allow you to remove the intestines, leaving the lungs, heart, liver and gizzard in the poultry carcass.
