Poultry chilling is an important step of the slaughtering process following evisceration. During chilling, a poultry carcasses temperature decreases and moisture retained in eviscerated carcasses reduces. Thus, poultry becomes more stable from a microbiological point of view and gets to the optimal temperature for cutting. To make chilling easier, birds can be placed on a chilling trolley. Various types of chilling trolleys are available, tubular chilling trolleys, trolleys with perforated aluminum racks or trolleys with peaks.
